Coconut Flax Granola Bars~ And they're healthy!

I ran across this recipe for healthy granola bars a few weeks back and was so excited! I’m always looking for healthier treats to make for the family and these had no butter, oils or added sugar (except for the chocolate chips). The ingredient list looked nice and healthy, mainly consisting of oats, ground flax seed, coconut and banana. Look how they turned out!

Healthy Coconut Flax Granola Bars

 adapted from this healthy granola bar recipe from Undressed Skeleton’s blog
1 cup finely shredded coconut
1 cup oats
1 cup ground flax seed
1 banana
1/4 cup unsweetened almond milk
1 tablespoon vanilla
1 tablespoon agave nectar
1/4-1/2 cup semi-sweet chocolate chips
Preheat the over to 350 degrees and line a cookie sheet with parchment paper. Mix the oats, flax seed, banana, coconut, agave nectar, and vanilla with a mixer. After it’s thoroughly combined, add the almond milk. Put the mixture onto your cookie sheet and form into a rectangle. (I pressed it to about 1/2 inch deep.) Scatter the chocolate chips evenly on top.  Bake for about 15 minutes until it begins to lightly brown. Let cool before serving.
